Sorry for mislabeling the infulae as a stole. (Raised Presbyterian, married Methodist, nary a mitre between them!)
As to tinctures, I had incorrectly assumed that white doubled gold was the standard pattern; but the other two examples posted later were white doubled blue with arms containing lots of blue, and white doubled red with arms containing no red -- so I now assume the color of the back side of the infulae is up to the new bishop and his/her artist, either to mirror or contrast with the colors of the arms.
