Is Katherine the heraldic heiress? I haven't heard any mention of brothers, and I think she is older than Pipa.

There are no brothers and it doesn't matter which sister is older. In England, heraldic heiresses inherit equally.

But it doesn't matter anyway, at least in connection with this particular marriage. The Middleton arms will never be quartered by Prince George or any other children, nor will William bear them in pretense because neither of those things is done with the royal arms. The Middleton arms can appropriately be impaled with William's for her use (and will be when the time comes for her to have her own standard/banner), but that would be the case whether she were an heiress or not.

If Philippa marries an armigerous man, then the Middleton arms will pass on to her children to be quartered with her father's.

Not that this changes your point about the heraldic heir(ess) but there is a brother. Catherine and Philippa have a younger brother, James.

Stupid me! Then Philippa's hypothetical future children will not, in the normal course of things, inherit the quartering.
